Salad –
    1 x Pack of ready cooked Black Beluga Lentils (you can use any cooked lentils)
    1 x Small finely chopped Onion
    1 x Finely chopped Red Pepper
    3 x Sticks of finely chopped Celery
    1 x Small bunch of chopped Coriander
    2 x handfuls of mixed chopped Nuts or Seeds (toasted)
    1 x Chopped Avocado
    1 x Large Carrot julienned or shredded

    Dressing –
    1 x Clove of Garlic
    1 x Tbsp Peanut Butter
    1 x Tbsp Tamari or Soy sauce
    1 x Tsp Hot Sauce (optional)
    1 x Handful chopped Coriander
    1 x Tbsp Lime Juice
    1 x Tbsp Vinegar. (Rice Wine Vinegar ideally)
    1 x Tbsp Date Syrup (or other sweetener)
    1 -2 Tbsp Water (to get to a dressing consistency).

    The recipe


    Even the name – Black Beluga Lentils sounds sexy – These little black nutritional powerhouses are so perfect for a salad. I buy the packs of cooked ones so that I can make a quick dish without having to cook the lentils first. With an oriental dressing and served over salad leaves or on it’s own this makes a truly delicious and nutritious salad.


    To make this:

    You will need a large bowl, sharp knife and a blender for the dressing

    Break up any clumps of the lentils with a fork and place in a bowl
    Add the remaining ingredients and stir to mix

    To make the dressing:
    Crush the garlic
    Add the other dressing ingredients except the water and blitz up
    Add water to let down the dressing to a coating consistency

    Pour the dressing over the salad
    Adjust seasoning adding Salt and Pepper if needed
