Ingredients

    2 X Cups Vanilla Soy Milk
    5 Medjool Dates (pitted)
    1 tsp Cocoa
    1 Banana
    Handful of Ice cubes
    1 Double Espresso
    Pinch of Cinnamon

    Intro

    This drink comes from my favourite restaurant in Toronto – Fresh. I loved it so much and went so often that I bought all of their cookbooks.

    Fresh started as a juice bar and morphed into a restaurant and is now a small chain, serving healthy delicious food.

    in one of their books there is a section on Espresso Shakes. I had always made myself soy lattes but had never thought of adding other ingredients. That got me thinking and here is my first effort, which I just love. It is my summer weekend “go to” drink. It is rich and creamy and deliciously cool but with a great caffeine kick.

    Method

    You need a high power blender for this as you want to thoroughy crush the ice.

    Simply add all of the ingredients to the blender and blend up until smooth and creamy.

    There may still be small pieces of dates remaining. To make it entirely smooth, add the dates first and then 1/2 cup of soy milk and blitz into a paste and then add the remaining ingredients.
